The treasured shoulder cut, called presa in Spanish, is considered to be of the finest cuts from the Cinco Jotas collection. It is a cold cured meat located between the top of the shoulder and the loin of the pig. It’s an artisan product made from free-range pure-bred 100% ibérico pigs with their famous black hooves, or pata negra in Spanish. These free-range animals maintain a healthy diet of herbs, mushrooms, roots, and other treats found in nature, along with – of course – the famous acorns that give this delicacy such a rich, nutty flavour that is high in healthy omega oils.
