To make this cava we choose the best white wines from Macabeo, Parellada and Xarel•lo grapes. After adding the sugar and selected yeasts, the second fermentation is carried out in the bottle (traditional method) in our cellars at a temperature never higher than 16º C in order to achieve a small and persistent bubble. The bottles remain in our cellars in strict darkness and silence for a minimum of 12 months.
Tasting notes:
It is a pale yellow cava with greenish tones, clean and crystalline with fine and integrated bubbles that slowly emerge forming a crown. On the nose it presents itself with good aromatic intensity, very fresh and fruity but with notes of aging. Well structured on the palate, smooth and balanced. The retronasal sensations are clean.
Pairing:
This cava is very suitable for all kinds of fish and Iberian. Perfect to start and finish any meal.
Service Recommendation:
We recommend serving Cava Jaume Serra Brute Nature between 4 and 6º C.
